The day you realize you have Auto Immune disease…

In 2009 I was diagnosed with the Auto Immune disease Rheumatoid Arthritis and suffered with pain daily.  It was excruciating, especially in the mornings.  I was desperate for relief.  Then my Rheumatologist diagnosed me and immediately wrote a prescription for Methotrexate.  I researched it and found that it was a form of chemo-therapy and had what seemed like a trillion side effects. Uh…no.  I already had pain, I didn’t want pain and side effects!  Searching for an Rx drug free cure, I went Vegetarian for about a year, then still in pain, to Vegan for about three more years.

Auto Immune Disease Kills…

The loss of my sister at age 42 to a rare auto immune disease called Acute Polychondritis in 1998 stayed with me as a reminder that Auto Immune is serious, and I had it.  More recently, in 2011 I lost my brother at age 48 to another auto immune related liver disease.  Feeling like a ticking Auto-Immune time bomb, I began to get depressed and figured it’s just a matter of time that my AU blows up out of control and I get sick beyond repair.  These feelings of depression started effecting everything in my life.  I got to a point where I no longer felt worthy of feeling good. If that makes any sense.  I felt inadequate as a wife, mother, daughter and sister. I just gave up on health and went back to eating anything and everything I wanted.  Especially chocolate cake! I was the master of baking chocolate cake.

God gave us good food with healing capabilities…

I knew that God put food on this planet to sustain us and to heal us.  By researching different foods and understanding how they effect your body, I learned that food cured different ailments. I was led to the Whole Food Plant Based way of life. I watched a documentary called Forks Over Knives that literally changed my life.  it didn’t take long to learn that although I was adding healthy foods to my diet, I was also “keeping bad foods in” my diet.  Chemicals, fats, refined sugars.  It was like a light bulb that went off for me!  I transitioned over to eating foods that were 100% whole and 100% plant-based. Then I cut out all refined sugars and bad fats.  I knew I had found the answer when one day, I walked upstairs in the morning with no limping, and no effort!   It was about 10:00 am that morning when it hit me.  I felt amazing!

I had to make a change…

In March of 2017.  No more mediocrity, I was done playing around.  It was time to get serious! If I was going to lose weight and get rid of this pain for good, I needed to stop messing around.  I freshened up on my Whole Food Plant Based knowledge by re-reading the book Engine 2 Diet by Rip Esselstyn and watched Forks Over Knives again. I also read The Healthiest Diet on the Planet by John A. Mc Dougall.  Inspired,  I went back in “cold turkey” so to speak – pardon the pun, and have already lost over 40 pounds since getting back into the Whole Food Plant Based groove!  Best news though, is that once again, like before, my Auto Immune disease pain is literally in remission.  I definitely know that I still have it.  How? Because every time I eat something that I shouldn’t, I have a flare up. There is absolutely NO coincidence here.  For me it’s eat bad = have pain.  Eat great = no pain.  It’s not rocket science!

So, why the blog?

So, why the blog? My mother was recently diagnosed with breast cancer.  I had already been back on track again with my Whole Food Plant Based lifestyle for about a month before her diagnosis.  As soon as she found out she had it, I pleaded with her to start eating Whole Foods Plant Based with me.  This diet has been known to reverse diseases like heart disease, lower blood pressure, cholesterol, triglycerides, and to control blood sugar levels,  Also according to Forks Over Knives research eating this way will not stimulate cancer tumor growth.  Why shouldn’t she try it?  My dad was totally supportive and told her that he would do this with her.  They are 81 and 85 years old, and adorable! I helped them clean out their pantry and they made a very radical change.  They had been doing the Atkins diet which is the complete opposite.  I began teaching them how to eat and cook this way, and how to juice and blend.  They are loving it.  I tell them they are going to live to be 110!!!!  I hope so anyway.

This goes beyond me, more people out there have Auto Immune disease…

That’s when I realized that this goes beyond me.  Outside of my 1 person circle.  Other people can and need to benefit from this, and I can help them.  I believe at that moment, I finally discovered God’s purpose in my life. I need to share this with others. People suffering need to understand that disease could be thrown into remission and potentially reversed by eating Whole Food Plant Based.  Lives could be saved, and if not saved, quality of life, greatly improved!  As I shared with others I was able to form a small support group in my community.  I have learned so much from the amazing people who are attending our meetings. Our key verse is 2 Cor. 7:1b – Let us purify ourselves from everything that contaminates body and spirit, perfecting holiness out of reverence for God.

With this blog, Plant Strong & Courageous, I wanted to give you one place to learn everything about Whole Food Plant Based.  Right now when someone asks me about how and what I eat, I am sending them to 10 different websites and books.  So many people ask, can’t you just send me a link?  Well, I want this blog to be that link.  I hope to take you on a fun, Whole Food Plant Based journey using my continued fight against Rheumatoid Arthritis; our support group’s questions and discoveries; and finally, my mother’s new experiences in her fight against breast cancer, heart disease & diabetes.

Fear can be gripping…

I was still afraid to start a blog.  Fear has been a big struggle for me for many years in different areas. I was inspired to go ahead and give it a try by a beautiful young woman named Madi, who had been suffering with her own health demons for the last 6 years, her chronic pain was much worse than any I have ever had to endure.  She recently lost her fight to her illness, and is home with Jesus in Heaven now. While she was learning to live with her chronic pain, she started her own blog to help others.  She was not afraid of anything, and wanted to share with the world how to live with chronic pain.  If I could have even an ounce of Madi’s strength, I would be able to accomplish so many things.  So this blog is and forever will be dedicated to Madi, in loving memory.  You can read, and may you be blessed by her blog here.
